When cooked, Basmati’s structure preserves its firmness, despite the fact that it assumes tenderness without splitting, and also unlike other rice, it is non-sticky thanks to the amylose material in the rice. The fragrance in Basmati emanates from a cocktail of 100 substances – hydrocarbons, alcohols, aldehydes and esters. A specific particle of note is 2-acetyl-1-pyrroline.
